Salame rustico di filiera al vino rosso
In the Medieval Village of San Gimignano and in the near farms an antique recipe prescribes to add good wine to season the mixture of the rustic salami.
From this ancient practice, comes salami with Chianti wine, exclusively obtained from selected porks.
Only the best parts are minced; Tellicherry black pepper berries and excellent DOCG Colli Senesi Chianti are added to the mixture .
The hot steaming and then the aging will enhance the typical aroma of meat and spices, enriched with the distinctive aromatic notes given by Chianti wine.
