Several blocks of Cabernet Sauvignon were used to make this estate wine. The older and smaller parcels, go into the open slate fermenters. Whereby they are plunged twice daily and basket pressed. The larger blocks are go into stainless steel fermenters. These two wines, allow for blending options in October. The wine goes back into barrel for a further 12 months in French Oak Hogsheads (15%) new.Â
