Mozzarella can also be smoked with natural and traditional methods. Traditional smoking involves exposing the cheese, held in a cylindrical contain whose top is covered with a thick, damp cloth, to wheat-straw smoke: the smoke passes through the cylinder and darkens the outside of the mozzarella turning it from porcelain white to dark yellow, while the inside takes on a highly distinctive and delightful smoky flavour.
