Tokaji Szamorodni Wines:
The word "szamorodni" comes from the Polish language, meaning "as it grew". The term suggests that the healthy and shrivelled berries are processed together. The quality, sweet or dry character of the wine is determined by the proportion of shrivelled berries. If, due to the weather, the number of aszú berries increases, the sugar component of the must also rises. The must cannot ferment completely, so the natural sugar content is retained and sweet szamorodni is produced. If there are fewer aszú berries, the sugar component will lessen, the must will ferment completely, resulting in dry szamorodni base wine.
