Touraine Sauvignon, White, Château de Pont
SITUATION Constructed on the foundations of a 16th century manor house, Chateau de Pont is a superb 19th century building located in the southern part of the Cher department, in the canton of Loches.
TERROIR The Sauvignon Blanc vines are planted around the château, on a clay-limestone terroir facing due south, with water regulation thanks to grassing.
VINIFICATION Ripening is regularly monitored by tasting the grapes. The grapes are picked when perfectly ripe, with optimum fruity aromas. The grapes are gently pressed, then undergo brief cold settling to retain maximum aromatic potential. Cold stabilised (5 days). Traditional temperature-controlled fermentation (17-19°C).
MATURING Aged on the lees for 4 months with regular bâtonnage (stirring). Early bottling.
VARIETALS Sauvignon : 100%
SERVING Serve chilled (10-12°C).
TASTING NOTES Pale golden colour. Powerful bouquet with nuances of grapefruit, boxwood, and blackcurrant buds. The wine is round, well-balanced and attractively fresh on the palate. Long and powerful aftertaste with sweet citrus overtones.
FOOD PAIRING Serve as an accompaniment to aperitifs, delicatessen meats, summer salads, fishes (zander), white meat, and goat's cheese.
