During the 10-month maturation period in a natural cellar, it develops its distinct brownish natural rind with a distinctive, rustic structure. Light caramel, pineapple, biscuits and butter heighten the excitement about this cheese. This expectation is fulfilled by the compact and wonderfully smooth texture and a delightful mix of citrus, honey and malt aromas.
