THE WINE L’INSOLENT brut – without added sulphites is made from grapes from plots located in the areas of Reugny/Chancay.
LOCATION The grapes for L’INSOLENT grow in a flinty clay soil supported by a limestone subsoil. This terroir has been worked organically for 5 years.
VINIFICATION Gentle pressing and fermentation at a cool temperature (18°C) enabling a good conservation of the aromas. Second fermentation in the bottle according to the Traditional Method after selection of the best juices.
AGEING “sur lattes” in a tufa cellar in Vouvray for a minimum of 18 months before disgorging creating bubbles of incomparable finesse.

SERVING Enjoy chilled (8-10°C)
TASTING NOTES The wine is crystal clear with golden tints and fine persistent bubbles. It is charming on the nose with aromas of pear and apple intermingled with subtle notes of linden and ripe lemon. On the palate, the fine creamy bubbles combine perfectly with notes of toast and white flowers. The finish is mineral and the aromas are long-lingering in this organically-grown sulphite-free wine. It soon reveals its intensity after opening.
