Discover Baku Caviar, the trademark of Azerbaijan Fish Farm (AFF). Our sustainable aquaculture practices provide high-quality caviar from 5 sturgeon species. Using a combination of traditional and modern breeding techniques, our sturgeons grow in a stress-free environment with recirculated freshwater from the Kura River and saltwater from the Caspian Sea. We purify our caviar by purging fish with saltwater, creating a taste indistinguishable from wild catch. Plus, our eco-responsible approach includes fingerlings release events to preserve the highly endangered sturgeon populations in the Caspian Sea.
