The Rinaldis family has been producing traditional balsamic vinegar of Modena from several generations. The family owns of a prestigious "acetaia" (i.e. the place where the vinegar is aged) complete with XVI and XVII century barrels, which are still used today.
The true secret of a good balsamic vinegar lies in the ageing process, which must never be rushed. The deliciousness of the final product depends on that unique aroma which only comes with a masterful ageing process. In 1990 the Rinaldis were awarded the "best of the best" prize for traditional balsamic vinegar, a coveted award only given once every twenty years.
Indeed, this process today couples age-old tradition with numerous modern checks and controls designed to safeguard the consumer; an example of the modernisation of vinegar production is the ISO 9002 certificate which constitutes a veritable quality assurance for customers. Moreover, a highly advanced filtering system ensures the product is stable, a fundamental factor for export.
Purposes, in particular for exports to Japan and the United States. So we can see that the art of producing balsamic vinegar - for the Rinaldis, once merely a family tradition - has embraced modern technology in order to create a product that can be considered unique in the world.
Thanks to the passion of the Rinaldi family and Alis business expertise, in 1979 we successfully began selling Italian vinegars to a global market, and subsequently took the decision to expand our product range to include sauces and dressings. In the quest for an all-round dressing, we worked hard to create a product which would allow consumers to savour authentic Italian flavours. We wanted a dressing that would combine uncompromising quality, versatility and competitive pricing. Having realised these goals, we then added a new fancy glass bottle, stylishly packaged in individual boxes.
In 1998 the jury of the European food exposition "Cibus" (one of the most important sector trade fairs today) awarded Alis S.r.l first prize in the "creativity and presentation" category for our new line of dressings in fancy bottles. Because we believe that food should be savoured, not devoured
