Around the 1920's, Alcoy was a city renowned for its textile industry - a capitalized, educated city in the midst of expansion. At that time, Cándido Miró Rabasa, a textile businessman from Alcoy, began a new venture that was to culminate in the manufacture of a food product popular throughout the entire world, the Anchovy Stuffed Olives. The Anchovy Stuffed Olive was already typical as an appetizer - each one of the olives was pitted and stuffed by hand, however, Cándido Miró Rabasa industrialized the stuffing and packaging process of the anchovy stuffed olives. By the beginning of 1926 he had a pitting machine ready and that is how EL SERPIS Olives were born.
