The dairy is more than 60 years old: in 1982 Gennaro La Marca, an artisan of milk, took over grandpa G’useppe's activity, who had started to cut off mozzarellas with his very gnarled hands since 1942.
The milk, one of the most valuable and expensive in the world, is offered by the buffalo, a strong, meek and easy-adaptable animal which is the representative of the main qualities of the Piana del Sele.
The agreeable acidulous taste with a hint of musk and the brisk sound issued from chewing the mozzarella Tre stelle have not changed since the time it was made by the first cheesemen.
