Domori is an Italian bean-to-bar company, part of Polo del Gusto, sub-holding of the Illy Group dedicated to the promotion of excellence in Food & Beverage. 

Domori is considered worldwide as the pioneer of fine cocoa and bean to bar chocolate production. Its mission is to spread the culture of aromatic cacao through premium quality, absolute purity, relationship with the local producers and celebration of the raw material and biodiversity. We are proud to say that within the dark chocolate segment we have no competitors in terms of quality and aromaticity as the raw material we use is 100% controlled and selected directly from our own plantations/the plantations we co-operate with. Our dark chocolate recipes have 2 ingredients only: cocoa mass and cane sugar. No cocoa butter, soy lecithin or vanilla/flavouring added at all.

• Achillea: Organic fruit juice company that uses 100% natural and organic ingredients. A unique process that respects the essence of the “short recipe”: the concept of “less is more” is expressed by not adding any extra ingredients, just fruit, water and sugar. Without any kind of flavorings, emulsifiers, preservatives or dyes.
• Pintaudi: Artisanal biscuit factory working with 100% natural ingredients and carefully selected raw materials. Without any kind of aromas (natural or artificial), no preservatives or dyes;
• Prestat: English company with a long history and tradition. It’s one of the official suppliers of Her Majesty The Queen Elizabeth The II, holding the UK Royal Warrant on its truffles and bars. Each product is now made with Domori covertures and this made Prestat the only sizeable UK artisan chocolatier to have complete control of the chocolate making process from bean to bar.

Domori agrees the value of the cacao purchased directly with each supplier, setting a price that takes into consideration the production cost, various levels of bean value (which vary by country) and the specific quality standards achieved. The amount we pay to producers remains constant: in fact, the minimum salary of a cacao farmer is usually strongly affected by the stock exchange, the type of cacao grown and the area it is grown in, all factors that can have a heavy impact on value and thereby affect quality.
