El Valle de Almodovar is a state of the art spanish cheese factory located in friendly Almodovar del Campo (Castilla y la Mancha) Spain.
Our cheeses made out of selected milks from goat, sheep and cow, have a rich history deeply rooted into the "Manchego terroir". They are a labour of love, dedication and expertise brought by our master cheese makers who strongly believe in producing the highest quality by pouring their heart and soul into everything they mould.
Our large portfolio of products is a reflection of our wide know-how and adaptability to any market requirement.
Marcos Salamanca Ibericos factory is a modern and singular factory embedded in the montain of Sotosserano village. Surrounded by the national park of Sierra de Francia-Batueca, within the Guijuelo DOP, its location makes it the perfect ground to raise, in free range, our Iberico Pigs.
This fantastic raw material is then transformed following the most traditional way of producing, respecting century old salting and curing processes in natural drying sheds.
Expertise, passion and patience from our master ham makers is key to achieve the extraordinay high quality of our Acorn-Fed Iberian Ham and charcuterie. A unique flavour and aroma as a seal of indentity.
