Today, thanks to four decades of experience, dedication and constant progress, Jamones Martínez has struck the perfect balance between the deep-rooted traditions of fine ham-making craftsmen and a modern business concept with a forward-looking approach. We start producing our hams by carefully selecting the highest quality white and Iberian pork meat from some of Spain’s best farms and abattoirs, which are certified in accordance with the latest EU quality criteria. At Jamones Martínez, we are aware of the importance of the curing process. We therefore monitor that process every day, ensuring that the different qualities of our hams develop well so that we can produce the wide range of brands that we offer our customers. At Jamones Martínez, we carry out the entire curing process for all of our products in a number of different store rooms set at exactly the right temperature and humidity levels. We strive to adapt the traceability of the curing process to the natural cycle of the four seasons, as our ancestors did traditionally.
