Beyond our manufacturing processes, closely guarded, we use fresh meat, including pork farmer Red Label and natural ingredients (vegetables, onions, parsley, raw milk, spices ...), we grind by hand pies in earthenware pots to promote the diffusion of aromas, our hams are matured in old slowly, worked by hand, salted in the vein, gently cooked in a cloth with bones in their vegetable broths ...
