We founded “The Celtic Sea-Spice Company” in December 2010, when we decided it was time that the YOU discovered seaweed; we have worked hard to bring seaweed to you in a way that is easy-to-use and easy-to-understand. Along the way, we have learned a lot about this incredible native resource, and even more about setting up a food business. If you had told me several years ago, when working in Washington DC as a journalist, that I would be spending my time in the machinery hall at trade fairs, learning about mills and sieves and driers – and enjoying it – I would have laughed. Xa has mastered spreadsheets: needs must! We have been helped along the way by some great chefs, mostly from Edinburgh, where we we both live, who embraced the enthusiasm of the two mad “Sea Spice Girls”. Our chefs helped us deepen our understanding of the tastes, flavours and uses, despite the fact that chefs officially never have a free moment. The end result of our aquatic adventure? We launched “Mara” as our brand at the end of 2012, selling initially, The Sea-Spice® Collection.
