The property Virgen de los Milagros, the ancient estate where MONVA carries out the whole production cycle necessary to obtain our Extra Virgin Olive Oil, is located in the municipality of Mancha Real, on the slopes of the Sierra Mágina massif, in the region of Jaén.
The area of our olive grove is 650 hectares and it benefits from this area’s clayey-calcareous soils and its slightly uneven terrain, which make the cultivation and harvesting processes of the olive grove easier.
In order to be able to plan the harvesting and to control every stage of the production line, we use our own estate-grown olives. The cultivation of our olive grove, dominated by the Picual variety, follows the conditions set out in by Spain’s Integrated Production Regulations, whose objective is the protection of the environment.
The harvesting process takes place early every year, always seeking, from an organoleptic point of view, the peak of ripeness of the fruit, and the olives are picked directly from the tree so the fruit never touches the ground.
Once we have made sure the olives have reached the mill –located on the same estate– in perfect condition, we carry out a meticulous cold-press extraction process that guarantees that the organoleptic richness of the fruit will remain intact.
