Passo Ladro supports sustainable agriculture, both for the region and for farmers.

We work with the utmost respect for the environment, for example by using new technologies such as software, wireless networks and humidity sensors for the irrigation system. This enables us to avoid wasting water.

We have adopted a fair and organic approach, acknowledging the value of our labourers’ efforts. To them, we transfer managerial know-how and, in exchange, they share with us knowledge that has been handed down for generations.

To rediscover how food matures with the seasons, we have learned to wait, respecting the rhythms of nature and its products.

Today, we can deliver all the benefits of a nutritious diet, enhancing the qualities and properties of the organic fruit and vegetables we grow – unique in flavour and aroma.

We make sure that all waste is minimised. Surpluses are transformed into preserves so that flavours can transcend the seasons in recipes recommended by the chef, who also makes gourmet products.

We are aware that the word organic has been exploited for market needs many times over. For our part, we are committed to increasing the value of what we grow, so as to offer a viable alternative to the products made by the large-scale retail industry. In doing so, and to maintain the quality we are striving for, we cannot yield to mass distribution practices. We respect the trust that customers place in us, and we repay it by offering them the honesty and quality of our work.
