Pasteli is a Greek traditional pastry based on sesame and honey. Both ingredients are natural products with nutritional value. The roots of the history of this pastry are lost in the ancient years. Honey and sesame were the main ingredients of the nutritional habits of the ancient Greeks, who had invented different dishes in order to use these two ingredients. Pasteli is a pastry full of nutritional ingredients and energy, elements that should be projected and included in children’s nutritional habits.
The common name of Pasteli in ancient years was Sisamis. According to Aristofanis Sisamis and Sisamous were symbols of fertility and were offered in the Marriage guests and especially the bride, after the wedding ceremony when she was passing the main gate of the house. Pasteli seems to have the same use in Busantine Times as it is mentioned in “ To kata Rothanthi and Dosiklia” TH420/Theodoros Prodromos. It is unknown when the name changed to Pasteli. Another versions about the provenance of the word are the verbs cover and sprinkle that is the making procedure of many pastries based on Pasteli. Moreover, according to I. Stamatakos words like pastos and pastoma have their roots in Pasteli.
Although it is concindered that sesame comes from Eastern Africa, many ancient Greek texts show that sesame was cultivated in ancient Greece. According to Xenofonta, Irodotos and Aristofanis, sesame among other cereals was produced in the gardens and fields for food. It is also mentioned that sesame was used for the production of sesame oil or in pastry. In Xenofonta’s book, “Kurou Anavasis” (book 4, ch. 4,13) it is described an oil that was made of sesame, pork grease and almonds.
