SIERRA DE SEVILLA: TO BE OR NOT TO BE To be or not to be: to be an altus ibérico, a pork of Iberian breed, black and good fed on acorns, or not to be. This one is the SIERRA DE SEVILLA basic inspiration, and this is the absolute condition to become ham under that label. In our company, SIERRA DE SEVILLA, the quality is the result of a permanent effort, from our agricultural team as much as from our technical team. In the heart of the Sierra Norte natural park, in the village of El Pedroso, are situated our modern installations, where we apply all the traditional and ancestral cares to elaborate the Iberian ham. With our cellar, carved in a granite field, with the open air of the sierra and the sea salt, we obtain a natural process of maturation of 36 months. This process together with the know-how of our Ham Master give to our hams an exclusive taste, texture and aroma. Our hams are elaborated with pure breed Iberian pigs. These pigs are carefully bred in the open air, are allowed to grow naturally and feeding on the best quality acorn. The Dehesas (a form of Mediterranean woodland) are located in the Sierra Norte de Sevilla natural park. This area represent the 20% of the Acorn Dehesas of Spain, in a land which it has been recently declared Worlwide Biosphere Reserve by UNESCO.
