Dear Friends, On the treshold of the new millennium, we wish to introduce to you our family operation, and at the same time look back to our beginnings almost a decade ago. In 1992, quite unexpectedly, we acquired a considerable amount of old "Soleras" of sherry vinegar. The Soleras had been stored and almost forgotten in the O’Neale family bodega, one of the oldest bodegas, in the historic centre of Jerez de la Frontera. The bodega has classic church-like architecture, massive stone walls, high arches, and a floor of the sandy soil as found in this region of Spain. The discovery of this culinary treasure, which makes the heart of every connoisseur beat faster, gave us the idea of building an enterprise whose sole purpose was to produce and market this rare vinegar. The product immediately received a great amount of attention from all over Europe, especially from the French gourmet food industry. Today it is sold around the world by leading delicatessen and specialty food stores. The same care and attention used for the famous sherry-wine, the basis of our vinegar, goes into our production. Each variety is stored and aged in oak barrels, which were originally used for sherry wine, and the vinegar is further developed through the "Criadera and Solera" method. Due to rapid growth, we acquired two additional bodegas, and our present inventory is now over 4.500 barrels. This is probably the largest cache of vinegar that carries the protected certificate of origin "Vinagre de Jerez". Our motto is "Quality and Service", and we are presently prepared to qualify for the ISO 9002 certificate by the "Bureau Veritas".
