Caviar : Trout roe was one of our first products, when we started 14 years ago. What started it all, was watching huge amounts of trout roe being thrown in the harbour in Årøsund near Haderslev. It had been discarded by the Japanese quality control, because only very deep red roe was good enough for the Japanese market. Therefore we made an arrangement with the local company, which granted us a corner of the factory to work in. Butler's Choice got all the roe that was rejected by the Japanese. We salted it, and filled it in glass jars. And many jars were filled! This beginning gave us the passion for trout roe and caviar products. Today we have still trout roe in our assortment – in a smaller scale. But our roe is still filled by hand – and we only buy the finest roe from Denmark and France.
