1. Honey Vinegars:
Honey vinegar is made solely from honey and water. No less than two fermentations are necessary, as well as several decantings. During the first fermentation during the sugar is transformed into alcohol. After a period of rest, a second fermentation transforms the alcohol into acetic acid: the vinegar.
This clear golden vinegar is neither sharp nor sugary and will pleasantly flavour seasonings. It can be used just like any other vinegar, for salad dressings, deglazing sauces, etc.
