Organic Demeter Olive Oil which is produced from seeds from controlled organic cultivation can only be obtained by cold pressing in compliance with determined maximum temperatures. Extraction is not permitted. Furthermore, the use of genetically-modified (GMO) seeds, as is generally the case, is forbidden in organic cultivation. Refining is, however, allowed in the organic sector using specially-approved processing agents and in compliance with specified maximum temperatures.
