The mild climate in the Sibari hills in Calabria enables early harvest. The hand selected healthy olives are processed in a stone mill to extra virgin olive oil within 24 hours of harvest. The oil is bottled unfiltered and it is characterized by a fruity taste. Use: For cooking in general, for sweating vegetables, and for salad dressings.
