1. Red Snapper Fillet • The red snapper has a bright red skin and firm, white, flavoursome flesh. Whole fish are rarely available. They have largely been replaced on the market by the more convenient whole fillets or fillet portions.
2. Redfish Fillet • The redfish remains one of the most popular edible fish in Germany. Again, whole fish have been overtaken in popularity by fillets. Redfish fillets are also a popular choice in workplace catering, as they have health benefits such as easily digestible proteins.
3. Gilthead Bream Fillet • In recent years the gilthead bream has become a fashionable choice – which is hardly surprising given its wonderful flavour and Mediterranean zest. The fillets are cut and flash-frozen from freshly harvested fish.
4. Zander Fillet • This typical predatory fish is traditionally caught in countries such as Russia and Kazakhstan, where it is carefully scaled and expertly filleted.
5. Pangasius Fillet • This fish, which has become extremely popular in recent years, is sourced from controlled fish farms in the Mekong Delta. The light-coloured fillets are very versatile, particularly in workplace catering.
6. Salmon Fillet • Which tastes better: the wild salmon that fights for its daily food, or the farmed salmon (Salmo salar) Gourmets will have to decide for themselves, with fillets of wild salmon from the Pacific and portions of Salmo salar.
