Frozen Atlantic Salmon Fillet, Trim D, with skin

We produce fillets from fresh Atlantic Salmon. The salmon is already gutted when arriving at the processing plant, so we start with removing the head. Then the salmon goes through a filleting machine where the two fillets are cut from the backbone. Next step is trimming, which is first done by a robot, and then further trimmed manually. Then the pin bones are removed by a machine, followed by manual control. We often vacuum pack the salmon fillets before they are frozen. An alternative is to pack the fillets interleaved (with plastic sheets between the layers of fillets) in a cardboard box, and then frozen in the box. The frozen fillets are then ready to be shipped out to the customer.
