We produce portions from fresh Atlantic Salmon. The salmon is already gutted when arriving at the processing plant, so we start with removing the head. Then the salmon goes through a filleting machine where the two fillets are cut from the backbone. Next step is trimming, which is first done by a robot, and then further trimmed manually. Then the pin bones are removed by a machine, followed by manual control. We often vacuum pack the portions before they are frozen. An alternative is to pack the portions interleaved (with plastic sheets between the layers of portions) in a cardboard box, and then frozen in the box. The portions can also be IQF (Individual Quick Frozen) and then glazed with water before packed bulk in a cardboard box. The frozen portions are then ready to be shipped out to the customer.
