Made with Biga (a pre-dough made by mixing water, flour and a small quantity of fresh yeast, requiring long fermentation times, at least 20 hours) and sourdough starter, with a rectangular shape, stretched and topped traditionally by hand. A crispy crust and a soft, airy core, topped with 100% Italian tomato and lactose-free mozzarella from the finest-quality Italian milk produced by ourselves.
