Gluten Free Pasta - Truffle
The Truffle is an hypogeous mushroom in tuber shape, which is present underground. Known since ancient times (1600-1700 av. JC), at the time of Sumerian. This earth fruit lives in symbiosis with the roots of some typical plants of our region, the Piedmont, with for example, the oak tree, lime tree, hazel tree, hornbeam tree and poplar tree. The truffle collection starts from mid-summer to late December, the Alba’s ‘trifolau’ (the collectors) passes through the paths of Langhe’s and Roero’s hills with its dogs, looking for the precious tuber. The truffle releases at the best its typical smell and gives a special taste to the plates in which it is added, in cold and hot plates. Ideal with the typical Piedmonts pasta.
Our Truffle pasta is born by the meeting of corn and rice gluten free pasta for excellence with the precious Piemontese tuber. From the meeting of these ingredients with truffle, it is possible to create an extraordinary flavours’ fusion. The pasta keeps perfectly the texture after cooking, to savour simply or with melted butter in order to accentuate the truffle’s flavour.
