The Greek Green Olives are divided in two categories - varieties. The first one is the round one, known as Amfissa type and is processed most usually like the Spanish type. The second one is the "Chalkidiki" type with long shape fruit and size larger than the first one. They are used mainly for Spanish type. Both types can be Pitted, Sliced or stuffed with Peppers, Almonds or Garlic.
