Salicornia del Gargano (Glassworth)
Salicornia or sea asparagus is known by the dialectal term "Savzodd" and the recipe we use for preservation in oil is ancient.
Flavored with spices and wrapped in olive oil, it is an excellent accompaniment to mixed salads, omelettes, soups and sauces, to dress first and second courses. Characteristic plant of the northern Gargano coast, it has a bushy habit, forming a thickly and irregularly branched bush from the base.
Rich in iron, magnesium, potassium and calcium, it is indicated for its purifying, refreshing and antiscorbutic properties.
