The manufacturing process is continuous : crushing olives, paste mixing, centrifugation for oil extraction, oil storage. Thus, it preserved plants aromas and has a peppery character, and sometimes, a little bitter. Dominant aromas are those of raw artichoke, green herbs, grapefruit, fresh almond.... For cooking, it married with all dishes hot or cold, grilled fishes, tomatoes salads, all steamed vegetables....
