This traditional vintage "Black Fruity" highlights our ancestral how-know that is to mature the olives before crushing them, then press or extract oil by centrifugation
This olive oil is sweet, with a little bitter sensation . The dominants aromas are those of black olives (ripe olives), underwood, cocoa, leavened bread, cooked artichoke, truffles...
It accomodates nicely with Mediterranean dishes made with tomatoes, peppers, eggplant, anchovies and with goat cheese.
