Limited Selection Aged 18 months Carnaroli (Special Packaging)
Paddy rice is stored in silos for 18 months. Once the aging is completed, rice is de- husked with a more delicate and longer process (machineries work at half of their potentials) compared to normal white rice.
The aging reinforces the proteins of the kernels, this resulting in:
a unique “al dente” consistency after cooking à a lower rate of starch loss
great capacity of absorption of condiments and perfumes
grains have more capacity of absorption since humidity evaporates during aging process.
Aged 18 months Carnaroli with a special premium packaging.
