Teas from the Darjeeling region in the foothills of Himalayas are one of the most famous Indian teas. Those from the first spring harvest (first flush) are valued for their properties and taste. During the winter, the plant stores nutrients which, after warming, protect the shoots during growth. As a result, the first tea leaves are rich in polyphenols that act as antioxidants.
Historically classified as black, however, due to many features common to both green and oolong teas, they are more and more often considered a separate category. They are called champagne among teas.
