Crush the kidney beans using a fork. Heat the olive oil in a frying pan and fry the onion, sweet pepper, mushrooms, garlic and jalapeño peppers for 1-2 minutes. Remove the pan from the heat and stir in the crushed kidney beans and the sweet corn. Season to taste with a little salt. Spread out the tortilla chips in an oven-proof dish, cover with slices of cheese and pour over the bean mixture. Place the dish under a hot grill for 2-3 minutes until the cheese just melts and the tortilla chips take in some colour. Pour on the sour cream and guacamole and serve immediately.
