Oriental stir-fried noodles with shitake

Cook the noodles according to the instructions on the packet. Cook the broccoli florets in lightly salted water until al dente and drain. Heat the olive oil in a wok and stir-fry the broccoli, bean sprouts, spring onion and chilli for 3-4 minutes. Drain the noodles, add to the wok and stir for a few moments. Season with soya sauce, salt and pepper and stir in the shitake. Divide the stir-fry between 4 places and serve with prawn crackers, for example.
