The pumpkin is the largest fruit of the plant world. Botanically speaking, the pumpkin is a berry because the seeds are located within the fruit. Those of the Steyr pumpkin are especially large, with a fine flavour.
It takes the seeds of 30 to 50 pumpkins to make one litre of pumpkinseed oil.
The seeds of the Steyr pumpkin are cleansed in clear water in the traditional way, before being gently roasted at 70° C. The seed shells are rich in chlorophyll and carotene, which gives the oil its luminescent, deep reddish-green colour. Pumpkinseed oil has a pronounced flavour of its own, with a deliciously fruity, slightly tart aroma.
This oil adds a certain ’je-ne-sais-quoi’ to even the simplest of dishes.
