Caviar is taken out from the Acipenser naccarii or Adriatic sturgeon, an almost-extinguished species, which we have been able to rear in captivity. This kind of sturgeon is more than 250 million years old, and it stands out for its slow growth. This fish is a real treasure, and its taste and color are full of different notes. It is usually pearl gray, although it can also shed different shades.
Since the caviar we offer is completely fresh, we can guarantee that its taste and notes will be always be reveled despite of the time, salt or the preservatives added. We have re-adapted the Russian process called Mallosol, whereby only a tiny amount of salt is added, approximately 3% to 4%.
