Skipjack TATAKI & Salmon TATAKI
TATAKI are a new product on the market.
Fishes are caught alive at sea and immediately frozen at -40°C at the vessel. On land the fish is cut in loins ensuring that its temperature will not get over -20°C.
The loin is cooked a few seconds at 850°C, seasoned and passed through freezer tunnel. The product is then very easy to ease: defrost, slice and eat.
Species available: skipjack loin & salmon.
