Building the state of the art craft brewery in 2015, Darling Brew was originally the brainchild of Kevin and Phillipa Wood, who started the business in 2010. After a decade with Darling Brew and establishing it as a household name, they were ready for a new venture and sold their remaining shares to Mario, after appointing Tewie Roos who was ready to take the brand to new heights.
The idea that led to the establishment of Darling Brew came to the original founders when they were travelling through Africa in 2007, and came upon and were inspired by a local microbrewery on their journey. Our maple farm is in Milan Quebec has been making syrup for over 40 years. It now covers almost 2000 acres of land. Our forests are certified organic, meaning we don't use any synthetic pesticides, herbicides, or fertilizers. We only use environmentally friendly and sustainable farming practices to ensure that the land and it’s natural resources are protected for future generations. Our sap is collected in the spring when the temperature fluctuates between freezing at night and above freezing during the day. This causes the sap to flow from the tree into collecting lines and to the sugar house. We then use state-of-the-art, eco-friendly technology to gently boil down the sap using wood powered evaporators without compromising the natural flavor and nutrients. All firewood used in our process is sustainably harvested from our forest in order to keep it it an amazing maple orchard. The result is a pure, authentic maple syrup that's not only delicious, but also good for the environment.
