They are made from uncooked goods, which has had the skin and seeds removed. They have a mushy texture, and often contain traces of fruit / vegetable. This peculiar texture comes from the extraction of juice during processing. Purees are used as an ingredient by many food industry segments. They are especially popular in beverage, dairy, confectionery, baby food and baked goods. But why?
