Quality:
The almond is cultivated in alternating rows or double rows of the varieties "Nonpareil", "Carmel","Neplus" and "Mission". The grades differ in form, colour and in the process of roasting and skinning. Qualitatively, "Nonpareil" is "the best" of the almonds. It has an attractive form and a uniform size. It is available both in natural (brown) and blanched (white). Additionally, almonds are sold in processed forms (sliced, grated, slivered).

Uses:

The Macadamia nut became the youngest member of the nut family in 1857 when it was discovered by John Mac Adam, after whom the nut was named, in the rainforests of Australia.

Not only the taste is extraordinary, also the health advantages of the Macadamias are particularly worth mentioning. 80% of the fat contained in the nut is monounsaturated, making this specialty a healthy delicacy. The Macadamia nut contains more than 80 % of unsaturated fat which is healthy for the heart. Besides this, the nut is a good source of antioxidants, protein and fibre.

Their high individual fat content makes the storage of fresh nuts and the roasting process for other uses difficult. For this reason, the nuts are dried to a water content of 2 % and vacuum packed. "Delget Nour" is currently the world-wide mostly cultivated variety. This variety, whose name means "finger of light", originated in Algeria. The fruit is large, has an excellent taste and can be stored over long periods of time without the use of preservatives. It should be stored in a cool and dry area.

Dates are highly recommended for good health; they improve digestion and contain important minerals such as potassium, phosphorus and magnesium, along with other healthful ingredients.

Uses:
Dates are a delicious addition to fruit salads, granola, baked goods and winter desserts. Together with raisins, figs and prunes they are an essential ingredient in fruit bread.

Quality:
Sweetened, dried cranberries contain fruit solids and therefore have a positive effect on our health. The fruits have not been treated with sulphur and are free from added colourings. Apart from their pleasantly acidic flavour, the ruby-red berries are known for their general health promoting properties. The North American Indians valued the medicinal properties of the cranberry, which due to its flower shape was called the "crane berry". They also used the fiery red berry juice with its natural disinfecting properties as a healing and preserving agent. Today, the berries are known for their many important vitamins and are recommended for reinforcing our immune system. Regularly enjoying cranberries reduces the risk of urinary tract illnesses and reduces the danger of cavities and gum disease.

Cultivation and harvesting:
In May, the new flowers begin to grow on the long vines which spread out across the ground. From mid-June, the pinkish-white flowers begin to open up. After three to six weeks, the flowers start to fade and tiny green nodes begin to show, which then grow into cranberries over the course of the summer. After 75 to 100 days, the berries will be fully grown. The berries are harvested between mid-September and the start of November. Today, farmers use two different harvesting methods: the labour-intensive dry harvesting method and the less labour-intensive wet harvesting method.

Uses:
Dried cranberries taste particularly good as a quick snack when you’re on the go, with granola and yogurt or with fresh fruits. They can also be used to add a subtle touch to a wide range of main dishes or desserts. Juicy cranberry muffins are extremely popular and can be found all over the world.

Quality:
France / Chile: Qualitatively, France and Chile deliver the highest quality product in the world. This is true of both taste and processing. In France and Chile, the walnuts are still shelled by hand at home. This leaves the half kernels almost completely undamaged, in comparison to the USA, where shelling id done by machine.
Cerneaux extra represents the best quality French walnuts. There are also:

- ¼ kernels invalides (damaged kernels)
- arlequins (discolored kernels)
- broken

Extra light is by far the best and cleanest quality produced in Chile. The Kluth Company receives a specially sorted product with almost 100 % undamaged halves.

USA: Not so intense in taste as the French walnuts. Shelled by machine with the disadvantages discussed above.

Other proveniences:
These kernels don't correspond to the quality standard of the Kluth company.

From a nutritional-physiological standpoint, Kluth walnut kernels are in keeping with the trend. Walnut kernels contain no cholesterol and have a high content of polyunsaturated fatty acids, which lower cholesterol levels. The ratio of polyunsaturated fatty acids to saturated fatty acids is 7:1 - that is one of the best ratios to be found in a naturally occurring food. Walnuts also contain bioactive substances which lower the risk of intestinal disease. Phytosterin is one of these substances. The phenolic acid contained in the nuts limits the growth of bacteria and viruses and protects against destructive oxidation and cardiac infarction.

The probably most significant information about walnuts was published in the internationally leading magazine, "The New England Journal of Medicine" in March of 1993:

Regular consumption of walnuts proven to lower cholesterol!

This is the result of a study on the Loma Linda University (California) on two groups of males. Both groups received a low cholesterol diet, but for one group, 20 % of overall calories were replaced by walnuts. The results were astonishing: after 2 months the blood cholesterol level in those who had received the "walnut diet" dropped 16 % more than for the other group.

Uses:
In the kitchen, the walnut is a creative and talented little nut. It tastes good with cheese bread, or with salad. Walnut kernels are popular dessert ingredients as well, e.g. in ice cream or nut cake. And they taste good all by themselves too.

Quality:
In addition to the A, B and C gradations, the quality is primarily determined by the country of origin. Every one of the above mentioned countries produces a different-tasting variety. The Chinese pine nuts, for example, taste quite neutral (bland), the Span./Port. pine nuts quite resinous, the Pakistani pine nuts very piquant.

The Pakistani pine nut kernels are approx. 2-2.5 cm long and 0.5 cm wide. The Chinese pine nut kernels are wide in form (1cm) and 2 cm long. The Spanish/Portuguese pine nut kernels are approx. 1.5 cm long and 1 cm wide.

Uses:
Raw or roasted the oil-rich nuts can be sprinkled over salad or vegetables. They make an excellent filling for vegetables and are used in sauces, rice dishes, baking etc. The best known recipe using pine nut kernels is certain to be “Pesto all genovese,” a thick paste made of hackled pine nut kernels, basil, parmesan, garlic and olive.

Uses:
The shelled waxed pumpkin seeds are often mixed with other products, roasted and sweetened or salted. Pumpkin seeds also have medicinal qualities. Original Cucurbita pepo pumpkin seeds for the pumpkin seed treatment.

The health conscious consumer is looking in increasing numbers for the seeds of the soft-skinned “summer crookneck,” a pumpkin variety (Cucurbita pepo L. convar. Citrullina var. Styriaca.

In Southern Styria, Southern Burgenland and in parts of Carinthia, this healthful oil seed is cultivated. These soft-shelled, dark green seeds harvested from ripe Cucurbita pepo squash have a particularly interesting nutritional content.

These shelless seeds of the bush oil pumpkin have been recognized by the German Federal Ministry of Health as a medicine.

Quality: Premium (extra large seeds) and US No. 1: only whole, uniformly sized sunflower seeds are offered as Premium and US No. 1 Grade. An inferior grade (small kernels, broken kernels and deviating colored kernels) is not offered by Kluth. Large bakeries use this grade.

Sunflower seeds offer a high content of antioxidants such as vitamin E or phenolic acids (over 2000 mg/100g). They work to absorb free radicals in the body.

Uses:
Lightly toasted without added fat, they are delicious with salads and soups. Sunflower seeds are ideal for baking breads. As a snack, in granola or granola bars, they are especially healthy.

Turkish Figs have a thin skin. They are available in the following varieties: Lerida/Loccum, Layer, Pulled Protoben and Natural in sizes no. 2-9.

Greek Figs have a thicker skin. They are mostly available as garland figs.

Kluth Turkish figs are of best quality Lerida figs. They are supplied by the largest producer in Turkey, who, thanks to their technical equipment, can guarantee the very finest quality. Kluth figs are free of preservatives and unsulphured.

Quality note:
In the spring and summer after the year of harvesting, the figs develop their own protective coating in the form of fructose. This process naturally prevents the figs from spoiling and the coating can be easily removed by washing.

Harvesting / processing:
Ripe mango fruits hang on long stalks from the mango tree and weigh up to two kilograms. The fruit contains a large, flat stone. The colouring of the fruit ranges from green to yellow and red, often in a combination of all three colours. For the production of dried fruit products, the fruits are washed, peeled and sliced after harvesting. Our special drying process preserves the fruit without any added sugar.

Uses:

The secret is in the drying process and salt content, which means that no sulphur is needed as a preservative. After harvesting, the tomatoes are washed and then salted during the drying phase. Kluth dried tomatoes are not treated with sulphur.

Quality:
The Italian word for tomato is “Pomodoro”, which means golden apple. Tomatoes are very healthy due to their high vitamin A and C content and a range of minerals. Due to the biogenic plant substance lycopene, tomatoes are an especially valuable source of nutrition. Lycopene is a highly effective antioxidant. It prevents the formation of cancerous cells, which are caused by the attack of free radicals. Lycopene prevents the growth of existing cancerous cells, such as prostate cancer cells. Furthermore, tomatoes contain the substance tyriosine, which is said to guarantee good moods.

Uses:
Dried tomatoes have an intense flavour and can be used in a variety of ways, for example as antipasti, in salads and as an accompaniment to various dishes (e.g. pasta dishes).
