Organic production techniques have been followed for the entire process: Grape production, fermentation, wine acetification and subsequent ageing. It also adhees to all the requirements of the Sherry Vinegar Denomination of Origin.

The result is a vinegar with a bright amber colour of medium intensity. Its acetic aromas are accompanied by notes of apricot jam with a surprising freshness.

Its flavour is vinous, light, delicate and balanced with a wide range of aromatics and pleasantly long on the palate: All in all a superb vinegar which is logically suitable for any organic recipe. Simply a few drops splashed on some good fried eggs or on vegetables will transform some of our typical dishes. Try using it with crushed garlic, sea salt, peppercorns, a clove and a pinch of paprika for a delicious marinade.

A vinegar with a wonderful mahogany colour and amber tones with an intensity that shows its ageing.  Its acetic aromas are of Sherry and spices of considerable pungency with a suggestion of the sweetness typical of an old Sherry.

The flavour has nuances of biological ageing found in a Manzanilla sherry with those soft aromas of yeast mixed with a touch of the old and excellent oak wood in which it matures. Its result is a vinegar with a distinctive bouquet and great finesse.

Due to its unique characteristics, it is recommended for salad dressings, vinaigrettes, marinades, reductions, game dishes and fish. It is also the perfect ingredient for sauces and great for cold soups, such as gazpacho or ‘ajoblanco'.

Varietal olive oil: Cornicabra 100%. Balanced olive oil thanks to its high content in monounsaturated fatty acids and polyphenols.

WINTER BLACK TRUFFLE MELANOSPORUM

Presenting unmistakable exquisiteness for lovers of good cuisine, the "Périgord Truffle", or the Tuber Melanosporum, is harvested from November to March in holm oak forests between 500 and 1,000 meters high. This truffle, of great culinary value, stands out for its intense aroma, with spicy touches, and the exquisiteness of its lightly bitter flavour. It gives a unique flavour to pasta dishes, rice, meats and scrambled eggs.

This gastronomic delight, which fascinated kings, philosophers, cooks and gourmet chefs for centuries, can now be at your table.

AVAILABILITY AND SEASONS OF BLACK TRUFFLE

This diamond of haute cuisine is available for you from November to April, from our best French, Italian and Spanish producers. And a batch from the southern hemisphere is available from May to August.

QUALITY AND VARIATIONS OF BLACK TRUFFLE

There are several variations or quality grades, depending on the shape and ripening point of the truffle. At Laumont.shop, to ensure the best experience, we only deliver the extra grade. The extra grade has a regular shape, and 95% of the bark is without imperfections, so that the customer acquires specimens with good visual appearance that allows for layering with all slices round and symmetrical. They are the same specimens used in the best restaurants around the world, the truffles that customers fall in love with. They are sold at sizes between 30g and 100g per piece, trying to complete the weight of the order in one piece. A good serving for any recipe is considered to be 10 grams per person.

The price of a truffle evolves in a similar way across all seasons. From November to mid-December, the demand begins and the price is medium-low. In mid-December, during Christmas and New Year’s Eve celebrations, consumption soars and this delicacy usually reaches its maximum price of the season. In January, at its optimum ripening point, it reaches minimum prices throughout the campaign. January is when they are the best value for money. From February to April there is steady consumption, the quality is maintained and the price can suffer slight increases compared to the January minimum price, depending on the production of Tuber Melanosporum.

Truffles from the southern hemisphere generally have a slightly higher price than the winter season in France, Italy and Spain. Their quality and aroma are equal to or even better.
