The vineyards are located on a hilly territory that not only has a landscape of great value but also a long wine-growing tradition. These grapes are hand picked and softly pressed in the winery. The must obtained is maintained in stainless steel containers at low temperature to keep its freshness. It follows the fermentation in autoclave for nearly 40 days, at a controlled temperature of 14-15° C, with the addition of selected yeasts (Charmat method).

Bottega White Gold is a pure Pinot Noir sparkling wine.

CHARACTERISTICS

The grapes originate from vineyards in the hills (100-300 meters above sea level) and are characterized by marine sedimentary soils with fine clays. The grapes are manually harvested in wooden cases. It follows the vinification in white with immediate separation of the must from the skins. The wine obtained goes through the sparkling process which takes place in autoclave at 14° C with selected yeasts specific for Pinot Noir. The process has a duration of between 40 and 60 days and includes the daily pump-over of the product. The wine is then stabilized for a week at a temperature of -5° C and finally filtered and bottled.

Our Maxi brioche is hand plaited and made from fine ingredients such as butter and fresh eggs. The pearl sugar topping perfects the braiding for even more generosity. As beautiful as tasty, this brioche can be sliced in at least 30 pieces and be served as it is or cooked to make delicious French Toast.

Distributed in ambient or baked and frozen. Just let it thaw a few hours and serve.

Bottega Stardust is a product of immediate visual impact, as the green glass of the traditional bottle is entirely covered by a galaxy of crystals. The effect 'stardust' makes especially shining the moment of the aperitif and of the toast. The front of the bottle is free from crystals and reproduces by subtracting the sinuous Bottega logo that marks all bubbles of the company.

CHARACTERISTICS

Bottega Stardust is a Prosecco DOC, obtained by the vinification of Glera grapes, grown on the Treviso hills. This area, close to the Venetian Prealps, has a perfect climate for this native grape variety. The wide temperature range stimulates an increased production of aromatic compounds, maintains a good level of acidity in the grape and improves the polyphenolic composition. In the vineyard where these grapes are grown, the ages of the vines vary. The very old vines, some up to 80 years old, only manage to produce a small number of grapes, however they accumulate a higher concentration of substances and noble compounds. The resulting wine is therefore of a higher quality.

Pinot Metodo Classico Spumante Brut

Bottega Classico is a Metodo Classico sparkling wine, the Italian equivalent of the French Méthode Champenoise. Considered one of the most important systems for the production of elegant, complex and fine sparkling wines, it consists in favoring the second fermentation of wine inside the bottle, a process called 're-fermentation in bottle'.

CHARACTERISTICS

The grapes are hand-picked. The white wine vinification occurs by immediately separation of the skins from the must using soft pressing. The first fermentation occurs at a controlled temperature at 14-16° C for approximately 20 days. The obtained base wine is bottled and receives an addition of sugar and yeasts, to undergo the second fermentation according to the 'Metodo Classico' (Classic Method). During the ageing on the lees (which lasts for 16-18 months), the yeasts in autolysis release the substances that enrich the bouquet and the body of the wine. After the maturation, the bottles are placed neck down on «pupitres» to perform the daily «remuage» (riddling), which consist in gradually turning and inverting the bottles to favor the deposit of the lees in the neck of the bottle. The next step is the «disgorgement».The neck of the bottle is placed in a solution of freezing brine, which freezes the lees into a sort of hard pellet. Once the bottle is opened, the pressure from the bubbles in the bottle push out the pellet of frozen sediment, after which the dosage is added and the wine is re-corked and packaged for sale.

This wine is a Moscato Spumante made with juicy grapes grown in the Euganean Hills area in the district of Padua. One of the characteristics of this wine is then the unmistakable hint of roses, which evokes the image of the petals depicted on the label.

It is a sparkling wine made from Moscato grapes grown on the Euganean Hills, an area in Central Veneto with a famous vine-growing tradition. CHARACTERISTICS

The long and valuable work of selection performed in the first years of '900 by prof. Luigi Manzoni at the old School of Enology of Conegliano led to the cultivation of a series of crosses, including this cross Manzoni 13.0.25. The curious acronym is tied to the cataloging system in the field found in the notebooks of the professor. It is a cross between the Raboso and Moscato.This is a sparkling wine that originates from grapes grown in the Province of Treviso, in the Prosecco wine area, famous for its ''great wine tradition. The skins of the grapes are subjected to a process of maceration with the must that lasts for 24 hours. The sparkling process starts after the addition of selected yeasts directly to the must. This sparkling wine, obtained by a special cuvée of Glera and Chardonnay grapes, coming by a unique harvest, is characterized by unmistikable aromas.

CHARACTERISTICS

The grapes (85% Glera and 15% Chardonnay) are hand picked from mid-September in the vines grown with the 'cappuccina modificata' system, which is typical of this area. The grapes are pressed with elimination of stalks and vinified in white (must and skins are not in contact). The juice obtained is put in special steel containers, where it is fermented with the addition of selected yeasts. Second fermentation according to the Charmat method occurs then at a controlled temperature of 16° C so that the typical fragrances of the grapes of origin are maintained. It lasts nearly 30 days. During this period carbon dioxide is developed, so that the wine becomes sparkling. It is then cold stabilized, filtered and bottled.

Pumpovers are carried out daily for a better extraction. Once fermentation is finished, the wine is separated from the pomace, aged in steel for 3-4 months and cold stabilized. After 15-20 days of pump-overs the wine, completely fermented, is decanted and extracted through the racking. The wine is then naturally stabilized, aged in oaks, filtered and bottled. The grapes originate from vineyards facing north-south, located at 200-400 meters above sea level. The soils are sandy, clay, with high skeleton, alkali-rich metals. The grapes are hand picked and pressed with elimination of stalks. The vinification process involves a 20-day maceration period. Fermentation occurs at a controlled temperature of 24-26°C. The polyphenols extraction takes place thanks to daily pump-overs. The wine obtained is then left to rest and in this phase, malolactic fermentation occurs spontanously. The wine is then aged in oak casks for 24 months (18 in French oak barriques of 2,25-10 hl) and refined in bottle for a minimum period of 2 months.
