Organic Juraflore is a cheese made according to artistic standards. After three years of work, one of the thirty-two Fromageries Arnaud cheese houses found in the Jura Mountain Range is now converted for exclusive organic production. The milk is collected from a limited zone, guaranteeing milk is produced according to organic standards. The cheese must then be pressed within a 24-hour time frame that further guarantees the quality of this product that is perfectly adapted to a demanding market.

The bread that we produce, the basis of our sandwiches, is made with whole grain and multigrain flours, extra virgin olive oil and natural yeast. We removed the starter made from brewer's yeast choosing to use a starter made from sprouted brown rice.In this way we have a natural bread but at the same time tasty and rich in fibers, vitamins and minerals.

Juraflore Haut Jura won all the Gold medals in International Mountain Cheese Competitions from 1990 to 2003. Made and aged 1150 m above sea level. Discover this unique Comté cheese that is produced in the mountains and aged in the heart of the Haut-Jura National Park. The laws that govern the use of the mountain label demand that the milk production, cheese making and aging be confined to a mountainous zone. Abondance is a French cheese from the Haute Savoie region. It shares its name with the valley where it was born, the “Val d’Abondance” and the breed of cow that supplies the milk. 100 maturing days minimum.

It is much appreciated for the hazelnut taste that suits fondues and numerous other dishes. The milk used to make this cheese comes from a single herd which gives it its unique taste.

• OUR SPECIFICITY

We subject our producers to a rigorous selection process in order to be able to offer a standard of cheese that is faultless in terms of the quality of both the milk and the finished product. Our suppliers include two who have been awarded medals. We extend the maturing process for several months in cellars.

The name comes from the Savoyard term “re-blocher” which, in the 16th century, meant “to pinch the udders a second time” or “reblasse”, the name given to a local fraud. But that dates back further. Tradition has it that the farmers on the local mountains milked the cows once for their landlords (usually local abbeys), and a second time after nightfall for themselves. It would seem that from the Renaissance onwards, the amount due to the landlord was calculated on the total milk yield. The landlord – or an inspector sent by them – would check the yield to calculate the number of cheeses the farmer owed. In order to keep this figure down, farmers would only carry out a partial milking which they would then finish once the inspector had left. The milk thus obtained was known as the second milking. Although the yield was low, the milk was very creamy and had a high fat content and was therefore of better quality. In the 16th century it was also called “devotional cheese” because it was offered to the Carthusian monks of the Thônes valley to thank them for blessing their homesteads.

Tomme de Savoie is a French cheese coming, as its name suggests, from Savoie. Tomme de Savoie is a cheese from the Savoie Mountains. Originally made by peasant families to subsist off, this is undoubtedly the oldest of the Savoie cheeses. It is part of the economic and cultural heritage of both Savoies.

Tome des Bauges is a French cheese from the Bauges Mountains (Savoie). Tome des Bauges was already being produced back in the 17th century and is the fruit of very ancient traditions and skills. For a long time it was defined as “the cheese peasants eat”.
