Lemon Grass, also known as citronella, is an herbaceous plant of the grass family, native to the tropical regions of Asia, especially India. It is widely used in folk medicine, namely the leaves, which, in an infusion, have unique properties due to their chemical composition. The experience of preparing drinks with Lemon Grass also uses the technique of infusion, in order to give them a fresh and fairly sweet lemony aroma. “The Gin Box” Lemon Grass is aimed at harmonizing the drink known as Gin Tonic. To this end it should be put in the glass used to prepare the drink. It is not meant to be ingested.

A WHOLE NEW TYPE OF PASTA

A while ago we came up with the idea of modernizing the good old pasta, with an extra special JIMINI'S ingredient. And now we have finally taken the plunge! We’re delighted to introduce you to discover our delicious new pasta, enriched with insect flour! With its 18.7% natural protein and three ingredients (buffalo worm flour, durum wheat and eggs), you can simply cook the pasta with some vegetables or in a sauce, to have everything you need for a balanced meal.

And that’s not all! 86% of the ingredients used to make our pasta comes from organic farming. Why 86%? Basically because the whole insect powder that we use to enrich our protein pastes is not certifiable in Europe, just like all insects. The reason for that? The certification bodies don’t yet have specifications for insect breeding and therefore do not agree to certify insect producers. Fortunately things are moving in the right direction; Canada has recently issued the first certificates for the production of organic insects, they’re just not recognized in Europe yet.

INTRODUCING THE BUFFALO WORM

For this exciting new range we’ve welcomed a new insect to the JIMINI’S family, to keep our grasshoppers, crickets and mealworms company. Ladies and gentlemen, please put your hands together for the Buffalo Worm! He’s a small cousin of the flour worm, who is rich in proteins (55% protein in the form of whole powdered insect ), contains all essential amino acids and is a source of iron. Its scientific name is Alphitobius diaperinus, but that’s just too formal. As usual at JIMINI'S, we have chosen to only use European insects, to ensure the best quality and traceability on our products.

PROTEIN, BEFORE AND AFTER SPORT

So what's the difference with classic pasta? Protein of course! While the protein level of conventional pasta is around 10g before cooking, JIMINI'S insect pasta exceeds 18%. By way of comparison, a soy bean steak contains about 15% protein. The pasta’s ideal for a pre sports session. They combine complex carbohydrates for a progressive release of energy throughout the effort, as well as highly assimilable proteins for muscle recovery, which also makes it great for post workout. The combination of the protein, complex carbohydrate and the fibers lower the glycemic index of your meal which will provide satiety and a steady flow of nutrients into your body.

Our new range of fusilli pasta is crafted from only four ingredients - durum wheat semolina, eggs, basil and Buffalo worm powder. Like the other pasta range, 86% of the ingredients have been organically farmed for certifiable reasons in Europe.

With the JIMINI'S fusilli pasta there’s no need to add meat or other vegetable protein because it already contains 18.7% protein. The pasta can be prepared like any other type of dry pasta, you just have to leave them for 7 to 9 minutes before they can be munched.

GRAPE VARIETY: Garnacha

VINEYARD CHARACTERISTICS: Made with grapes from old dry-land vineyards over 30 years old, cultivated by the traditional system on the slopes of the Iberian Range, in arid, ferrous clay soil.

DATE HARVESTED: Manual, in the 2nd - 3rd week of October.

PROCESS: Traditional method. Cold maceration for 12 hours. Controlled alcoholic fermentation between 26 - 28ºC in stainless steel tanks. The maceration of the skin with the must is carried out for ten days, until the end of the fermentation. It stays two days more in maceration without pumping and then bleeded and pressed. The controlled malolactic fermentation is carried out in the tank.

AGEING: Aged in French Oak barrel for two months, in order to complex the wine and enhance its fruity and floral character. Slight pass through the barrel, seeking greater expression of wine.

TASTING:  

Color - Intense cherry red color with violet tones, very clean and bright.

 Aroma.- High intensity, fruity and floral aromas, marked varietal character with subtle tones of spices and red fruits and a light toasting afforded by the wood.

Palate.- Fruity and fresh start, with volume and fleshiness, balanced and very long aftertaste in which fruit and spicy notes reappear.

EDIBLE GRASSHOPPERS, FINE DISH, AND SNACK, NIGHTMARE FOR FARMERS

The edible grasshoppers, Locusta migratoria, are part of the Acridians species that we can meet in different regions of the world, and especially in Sub-Saharan Africa, Asia, Australia or along the Mediterranean coast. Just like their cousins, the desert or red locusts, grasshoppers have an insatiable appetite and are able to travel long distances flying or jumping which makes them impressively harmful for crops.

Their roles as pests are not overestimated, in countries such as Madagascar, edible grasshoppers and locusts regularly invade fields and literally ravage crops. Small compensation for farmers and local populations, they could capture and consume those edible insects, an excellent source of proteins. Wild grasshoppers can be contaminated by pesticides and therefore can potentially be very dangerous for human consumption and health.

The Buffalo worm or lesser mealworm (Alphitobius diaperinus) belongs to the same family as the mealworm. It is particularly rich in proteins in iron. The grasshopper: a worldwide famous edible insect

The edible grasshoppers are eaten in various regions like in Africa, Asia, Australia or on the Mediterranean coasts. Even if it seems exotic to most Europeans, entomophagy (the practice of eating insects) is wildly spread around the world: it is considered that a third of the world population eats insects regularly.
With more than 1900 species, edible insects clearly give you some choice! You will most certainly find your pleasure tasting the most famous ones: crickets, mealworms, grasshoppers or even yellow scorpions (often considered as an insect, wrongly!), but some varieties are more impressive than others. One will think about the giant water bug, traditionally consumed in Thailand, which can measure up to 15cm, or even to the green grasshoppers that can easily measure more than 20cm... However, the size is not all, and much more often texture can surprise us: unlike the crispy grasshopper, bamboo worms and other palm trees worms, looking like rubber, are rather soft under your teeth, whereas beetles with their hard carapace are tricky to bite. Prunes has a rounded shape, uniform in size, shiny appearance, soft texture and dark purple to black. It has an intense flavor in sugar characteristic of the variety and a characteristic smell.
The boneless plum has a high reputation for its excellent flavor and nutritional qualities. It has a high content of vitamins, minerals and fiber. In addition, the boneless plum contains a large number of antioxidants.

Another benefit of the boneless plum is that it is an excellent source of fiber and therefore a gentle stimulant of the colon. It is also considered beneficial to combat osteoporosis.

Cardamom is a seed pod, known for centuries for its culinary and medical properties. This spice is native to the tropical forest of Southern India and grown in only a few tropical countries. Botanically, it belongs to the "Zingiberaceae" family and consists of two species: Elettaria e Amomum. The use of cardamom in the harmonization of the drink gives it a slight pungent and sweet flavour.

Cassia, or Chinese Cinnamon, grows in Eastern China and belongs to the same family as the cinnamon tree. Chinese Cinnamon is a different kind of cinnamon from the tradition cinnamon we are mostly used to in Europe, which is the Indian Cinnamon. Its bark is rougher and more pungent. Both the aroma and the flavour give the harmonization of the drinks a sweet, very aromatic taste.

Coriander seeds, or coriander grains, derive from the same plant (Coriandrum sativum) which is commonly known as coriander, although they don’t have either the same aroma, or the same taste as the herb. Coriander is native of regions that go from the South of Europe and North of Africa to Southwest Asia. The aroma of its seeds becomes more intense and pleasant as they mature. Using them gives your drink a fragrant floral aroma.

Hibiscus is a botanical genus, with about 300 species, part of the Malvaceae family, provided with luscious flowers and foliage. It originates from Asia, especially India, and Africa, and possesses various medical properties. The well-known “Hibiscus Flower” is the result of drying the calyx of the flower of Hibiscus sabdariffa. Its use in the preparation of the drink results in flavours with active floral aromas and gives the drink a strong pink hue.

The juniper is a shrub of medium height of the coniferous plants belonging to the Cupressaceae family. Juniper is native to a broad area of the Northern hemisphere, from the shores of the Atlantic to the tropical regions of Africa and the mountain areas of Central America. It shows its maximum diversity in the regions of Mediterranean climate. Its berries are like small black spheres, fleshy and resinous, and inside them there are three extremely aromatic and pungently-flavoured seeds. Their use will give your drink a forest-like taste.

Lemon Grass, also known as citronella, is an herbaceous plant of the grass family, native to the tropical regions of Asia, especially India. It is widely used in folk medicine, namely the leaves, which, in an infusion, have unique properties due to their chemical composition. The experience of preparing drinks with Lemon Grass also uses the technique of infusion, in order to give them a fresh and fairly sweet lemony aroma.

Star Anise or Chinese Star Anise is a native plant of China and Vietnam. It is considered a spice for medical and culinary use. The pod of the Star Anise has the shape of an irregular star, with up to eight tips, and a span of up to 3 centimetres. These pods are hard and the colour of rust. Botanically, the plant belongs to the "Illiciaceae" family. It has an aroma similar to that of anise, since it contains the same oil, although it is stronger here. The flavour is found in the seeds of the flower, which give out an anise-y taste. Its use gives a sweet and intense tang in the harmonization of the drink.

Pink pepper is aromatic and mild. It is the fruit of the Schinus Molle shrub, of the Anacardiaceae family, coral-red in colour, which has nothing to do with the common pepper, although it is processed in the same way as other kinds of pepper. It is a plant native to the subtropical and tropical regions of South America (South-east Brazil, north of Argentina and Paraguay). It has a slightly hot and sweet flavour which gives your drink a distinct note.
