WINE MAKING:
“TIRIO”, demonym used to refer to one person
from “Tiro”, a Mediterranean port where the
violet-purple pigments obtained from a unique
species of sea snail, making a clear reference to the
attractive and intense color of the wine, were sold.
Traditional fermentation method at below 25ºC.
Maceration for 8 to 10 days in stainless steel tanks,
produced by carbonic semi-maceration in one part
of the grapes. Once the desired objectives have
been achieved, it is drawn off and pressed.
AGEING:
After the malolactic fermentation, it is aged for a
short time in French oak barrels to create a more
complex wine.
TASTING:
Colour.- Intense cherry Red with hints of violet;
a very clean appearance.
Aroma.- High intensity, it has a clean and potent
aroma with a clearly varietal nature. An assembly
of fruity and flowery nuances; potent with toasted
touches that provide complexity and quality to the
wine.
Palate.- Smooth attack, full and structured, round,
rich in nuances, full-bodied with a long finish.

must drained by gravity is cold macerated for four days with its lees. Static racking for
24 hours and fermentation in liquid phase
at 16 ° C for 10 days. Protection of the must

TASTING
Colour: Pale pink and litchi, with shades of
salmon colour, very attractive at first sight.
Aroma: Subtle and delicate high intensity

We selected those plots, aged at least 20 years
old on stony, clay-ferrous soils at an altitude
of 480-600 m.
WINEMAKING PROCESS
Thiol: A search to a more distinctive
aromatic profile. From the selection of the
finest vineyards, we decided to harvest at the
peak of maturation. We then left the grapes
macerate for four hours before bleeding the
must. The alcoholic fermentation took place
at a control temperature of 16º C for the next
15 days. During the process the juice was at
all times protected from the oxygen air to
enhance the much-desired thiol aromas.
TASTING
Colour: Pale yellow with shiny green hues
Aroma: Very high intensity , complex, citric
aromas, lemon, orange peel, exotic fruits,
grapefruit, passion fruit and fresh grass
aromas like boxwood. Clean and powerful,
with thiol notes.
Palate: Smooth start followed by a fruity
up-lift with a perfect balance of alcohol,
acidity and structure. Long-lasting and
aftertaste.

Einkorn is a foundational ancient grain and is the eldest of the four ancestral wheats (Einkorn first, Emmer 2nd, Spelt 3rd and Khorasan/Kamut 4th). It has been grown for millennia in the Middle East, North Africa and Italy. It differs from modern wheat in that it is genetically distinct and only has single grains on each side.
Organic Einkorn Flour is milled from the whole grain on our stonemill. The millstone slowly and gently grinds the grain to ensure it is processed at a low temperature and carefully milled. This process ensures that the aroma and vitality of each grain is well preserved.

Our sunny Mediterranean terroir, combined with the expertise of Berne's cellar master and his teams, offer an aromatic, flattering and refreshing rosé.
THE WINE/
Round and supple, Romance is pale salmon-pink, with pretty floral notes. An intense scent with notes of citrus, offering a round and fresh taste with apricot and peach flavours. It is a flattering, aromatic, wine with great persistence!
Grapes entirely stripped from stalks, followed by direct pressing and 3-hour maceration in the press based on the vine variety. Fermentation at 17°C.
TASTE:
Pale, salmon pink robe. Powerful and tangy bouquet with overtones of red fruits and notes of citrus fruits. Frank and fresh taste, with predominant apricot and peach. An aromatic and flattering wine, with a pleasantly long aftertaste.

These expressive and fresh wines are the new wines of Provence.
THE WINE:
Our winemaker and his team have made this cuvee with great precision and respect. This is an expressive Rosé that magnifies the qualities of our unique Côtes de Provence terroir. Our delicate Rosé, with hints of summer fruits, is underpinned by a pleasant and aromatic freshness.
Direct pressing, settling and fermentation between 14° and 18°C. Raised on lees.
THE TASTE:
Very pale pink, shiny robe tinted with apricot. Elegant and aristocratic nose with floral notes (freesia, peach and apricot). Round, fruity and elegant in the mouth, eminently drinkable. A superb wine, a real delicacy!
Marries ideally with melon and Prosciutto ham, stuffed courgette flowers, or a frito misto of squid and cuttlefish..

Direct pressing, decanting and fermentation at 18°C.
TASTE:
Pale pink robe. A fine wine, with notes of summer fruit, red berries, strawberry and fresh raspberry. Frank then round in the mouth, with a lasting finish. Well-balanced.
Serve at 8 to 10°C. To be enjoyed immediately.
Ideal served as an aperitif or with salads and barbecues.
