WINTER BLACK TRUFFLE MELANOSPORUM

Presenting unmistakable exquisiteness for lovers of good cuisine, the "Périgord Truffle", or the Tuber Melanosporum, is harvested from November to March in holm oak forests between 500 and 1,000 meters high. This truffle, of great culinary value, stands out for its intense aroma, with spicy touches, and the exquisiteness of its lightly bitter flavour. It gives a unique flavour to pasta dishes, rice, meats and scrambled eggs.

This gastronomic delight, which fascinated kings, philosophers, cooks and gourmet chefs for centuries, can now be at your table.

AVAILABILITY AND SEASONS OF BLACK TRUFFLE

This diamond of haute cuisine is available for you from November to April, from our best French, Italian and Spanish producers. And a batch from the southern hemisphere is available from May to August.

QUALITY AND VARIATIONS OF BLACK TRUFFLE

There are several variations or quality grades, depending on the shape and ripening point of the truffle. At Laumont.shop, to ensure the best experience, we only deliver the extra grade. The extra grade has a regular shape, and 95% of the bark is without imperfections, so that the customer acquires specimens with good visual appearance that allows for layering with all slices round and symmetrical. They are the same specimens used in the best restaurants around the world, the truffles that customers fall in love with. They are sold at sizes between 30g and 100g per piece, trying to complete the weight of the order in one piece. A good serving for any recipe is considered to be 10 grams per person.

PRICE OF BLACK TRUFFLE OF BLACK TRUFFLE

The price of a truffle evolves in a similar way across all seasons. From November to mid-December, the demand begins and the price is medium-low. In mid-December, during Christmas and New Year’s Eve celebrations, consumption soars and this delicacy usually reaches its maximum price of the season. In January, at its optimum ripening point, it reaches minimum prices throughout the campaign. January is when they are the best value for money. From February to April there is steady consumption, the quality is maintained and the price can suffer slight increases compared to the January minimum price, depending on the production of Tuber Melanosporum.

Truffles from the southern hemisphere generally have a slightly higher price than the winter season in France, Italy and Spain. Their quality and aroma are equal to or even better.

Story: The greatest sparkling wines in the world owe their excellence to cool climate origins and ancient soils, which are both qualities offered by the K1 by Geoff Hardy vineyard in the Adelaide Hills. The vineyard produces Pinot Noir and Chardonnay fruit that is delicate and fresh, resulting in exceptional sparkling wines that dance on your palate. This sparkling will add elegance and smiles to any occasion!

Nose: The nose is very attractive with beautiful aromas of green apples and yeast autolysis.

Palate: The palate is crisp and bright with notes of apple and citrus, followed by refreshing and perfectly balanced acidity.

Pairing: Always a great aperitif, this sparkling also goes really well with scallops with a chorizo crumb.

Story: The K1 Sauvignon Blanc vines are the oldest in the Adelaide Hills and are planted in a sandy loam area of the K1 by Geoff Hardy vineyard, a consistent hero of our vineyard. The vines are spur pruned to a low bud number to increase fruit quality.

Vintage:  In the Adelaide Hills and McLaren Vale the 2021 vintage started off with a cool moist period through a late flowering period leading to a smaller than average fruit load on the vines.  The weather at the end of summer through our ripening period was of very even temperatures, all this leading to a small crop of extraordinarily high-quality fruit. We are very happy with our 2021 wines across the board.

Nose: The nose is vibrant with intense aromas of passionfruit, citrus, white peach and just a hint of fresh herbs.

Palate: The palate is very refreshing, nice and lean, with a trace of florals accompanying citrus and exotic tropical fruits leading to a dry, crisp lingering finish.

Pairing: Crisp and dry, this wine is an ideal partner to seafood and less spicy Asian dishes. Try with freshly shucked oysters.

Story: K1 Chardonnay is styled to accentuate the characters of Kuitpo’s cool growing conditions and terroir. The fruit is gently handled to ensure aromatics are retained, with French oak and malolactic fermentation used to enhance the wine’s purity of fruit character.

Vintage: The 2018 growing season started slowly, but warmer weather eventually helped to speed things up. Fruit set throughout the region was good and the low rainfall and warm weather from January to April resulted in great sugar development, while a cooler than average March offered ideal night temperatures for colour and flavour development.

Nose: The nose offers a beautifully complex combination of citrus, green apples and toasty, buttery aromas.

Story: One of the more intriguing wines created in biblical times was the ‘Tzimmukin’, using slightly dried grapes to increase strength and longevity. At K1 we have captured the essence of this ancient technique by slowly air drying our best parcels of Shiraz and Cabernet Sauvignon in baskets to produce a quintessential Australian blend.

Vintage: The 2016 vintage was in general very mild with low rainfall. The lack of rain looked like it would result in a quick harvest, but a big downpour in early February made sure the vintage was more evenly spread out. The yields were up on the couple of previous years and the quality is looking great.

Nose: This wine is dark and intense with aromas of black cherry, plum, eucalypt and black olives with savoury spice notes of cloves and cinnamon.

Palate: The palate is ripe, smooth and full-bodied with additional aromas of blackcurrant. The tannins are big, lush and balanced, followed by a lengthy finish.

Food Pairings: Be daring and try this wine with an exotic African kudu fillet with a creamy mushroom sauce.

Oak Maturation: 20 months in seasoned French oak.

Story: The Riesling grapes for this Autumn Harvest were handpicked 11 weeks later than we normally would for a dry white wine. The additional hanging time accompanied by a natural botrytis infection have provided this wine with luscious sweetness and lingering intensity.

Story: The Family Selection Red Blend 2019 is a Shiraz- dominant blend made from grapes grown across a number of premium South Australian wine regions.

Vintage: The 2019 growing season started with mild weather and below average rainfall. Some late spring rain provided a bit of relief from the dry conditions. A heatwave in January was luckily too early in the ripening cycle to cause any damage to the fruit. This was followed by a very mild and dry finish to the vintage, allowing good hang time and flavour development to the smaller than average crop

Nose: The nose offers aromas of plums, blackberries and a hint of dried herbs.

Palate: The palate is bright and luscious with vibrant fruit, followed by a tight and elegant finish.
